Easy Banana Coffee Cake
4 tbsp Javy Coffee concentrate (use our decaf version if you don’t want the caffeine)
- 3 ripe bananas
- 2 eggs
- 1 stick softened/melted butter
- 1.5 cups flour
- 3/4 cups sugar
- 1 tsp baking soda
- 3/4 Powdered brown sugar (use 1 cup if you prefer it sweeter)
1 banana sliced lengthwise to cover the bottom of the coffee
Preheat oven to 350F (170C)
Blend all the ingredients listed until you get a creamy consistency.
In a greased baking pan, add a layer of powdered sugar at the bottom and then sliced bananas covering the bottom of the pan.
Pour in the mixture and tap it a few times to get rid of any air bubbles and then bake for an hour.
Optional: flip it over so the bottom is at the top and add more powdered sugar.
Let it cool and enjoy!
